The origin of the marron glace is the subject of several theories, some say that the first marron glace appeared at the court of King Louis XIV, the “Sun King”, thanks to the effort of Sieur de Varennes, who baked a chestnut with sugar which the king loved and was delighted by. Some believe that the recipe of the marron glace first appeared in the sixteenth century at Lyons in France while others are sure that the recipe came from Cuneo in Italy around the same time because of the availability of chestnuts and important diffusion of imported sugar there. Anyway, we all agree on the fact that the marron glace is an exceptional product that people like to enjoy during Christmas and New Year’s Eve.
